Golden Syrup Sponge Pudding for One - dairy and egg-free

single serve warm and sticky sponge dessert

Ingredients
  

  • 1 tbsp dairy-free margarine or 15g
  • 3 tbsp soft brown sugar or 35g
  • 1/2 tsp vanilla paste or extract
  • 3 tbsp self-raising flour or 30g
  • ¼ tsp bicarbonate of soda
  • ¼ tsp ground ginger
  • ¼ tsp cinnamon
  • 1 pinch salt
  • 1 tbsp dairy-free milk or 15g
  • 2 tbsp golden syrup

Equipment

  • 1 mixing bowl
  • 1 ramekin

Method
 

  1. Preheat the oven to 180℃
  2. In a small mixing bowl, cream together the margarine, sugar and vanilla
  3. Stir in the flour, bicarb, cinnamon, ginger and salt, as well as the milk and 1 tbsp syrup
  4. Pour into a ramekin and level off
  5. Bake at 180℃ for 12-15 minutes until risen and golden and skewer comes out clean.
  6. Whilst it is still hot pour the additional tbsp syrup over the top of the hot sponge.
  7. Eat whilst still hot, serving with dairy-free cream , custard or ice cream

Notes

To make four ramekins worth using the following amounts:
55g margarine
150g sugar
120g flour
1 tsp vanilla, ginger, cinnamon and bicarb
60g milk
160g syrup
