Oatmeal Raisin Cookie for one

dairy-free, egg-free, nut-free, soya-free, sesame-free, vegetarian and vegan serves 1

Ingredients
  

  • 15 g dairy-free margarine
  • 20 g soft brown sugar
  • Pinch of salt
  • 20 g plain flour
  • 10 g oats
  • Pinch of bicarbonate of soda
  • Pinch of cinnamon
  • 5-10 g raisins

Equipment

  • 1 mixing bowl, a small piece of baking paper and a baking tray

Method
 

  1. Cream together the margarine and sugar
  2. Stir in the salt, cinnamon, flour, oats and bicarb.
  3. Then mix in the raisins
  4. Form into a ball and place onto a lined baking sheet, press down so you have a thick disc
  5. If possible place in the fridge for at least an hour
  6. Preheat the oven to 170 degrees Centigrade
  7. I like to sprinkle a little extra salt on my cookie before baking
  8. Bake the cookie for 12-14 minutes.
  9. Leave to cool before eating
