Roasted Green Bean Salad

Dairy-free, egg-free, nut-free, soya-free, sesame-free, gluten-free, vegetarian and vegan

Ingredients
  

  • 200 g green beans trimmed
  • ½ red onion finely sliced
  • 1 tbsp extra virgin olive oil
  • ½ tsp salt ideally flaky salt like Maldon
  • A good grind of black pepper
  • ½ tsp good balsamic vinegar

Method
 

  1. Preheat the oven to 180 degrees Centigrade
  2. Trim the green beans and place into a roasting tin, add the sliced red onion.
  3. Drizzle with the oil and toss well. Season.
  4. Roast for 20 minutes
  5. Remove from the oven and immediately drizzle with balsamic vinegar
  6. Eat whilst hot, at room temperature or even cold.
