Scandinavian style potato salad

Dairy-free, egg-free, nut-free, soya-free, sesame-free, gluten-free, vegetarian and vegan

Ingredients
  

  • 300-400 g new potatoes
  • 2 tbsp sunflower oil or other flavourless oil
  • 1 tbsp wine vinegar
  • ½ tsp salt
  • 1 tsp Dijon mustard
  • 1 tsp caster sugar
  • 1 tbsp chopped chives or dill

Method
 

  1. Keeping the potatoes whole, bring to the boil in salted water and cook until tender, this will take about 15-20 minutes
  2. Meanwhile, in your serving dish, make the dressing.
  3. Whisk together the sunflower oil, vinegar, mustard, salt and caster sugar and set aside
  4. Once the potatoes are cooked, leave to cool enough to handle then slice in 1cm thick slices
  5. Add the just warm potatoes to the dressing and stir well.
  6. Once cool, stir through the herbs and enjoy
