Single Serve Christmas Cake

dairy-free, egg-free, nut-free, soya-free, sesame-free, vegetarian and vegan Serves 1 or 2

Ingredients
  

  • 2 tbsp alcohol of choice or apple juice
  • 3 tbsp mixed dried fruit
  • 1 tbsp dairy-free milk
  • 2 tbsp soft brown sugar
  • 1 tsp flavourless oil
  • ½ tsp mixed spice
  • 3 tbsp plain flour
  • ¼ tsp baking powder

Equipment

  • 1 ramekin or 1 small cake tin

Method
 

  1. Pour the alcohol or apple juice over the dried fruit and leave to steep for as long as possible, but at least 5 minutes
  2. Preheat the oven to 180 degrees C
  3. Grease a single pudding tin or a ramekin
  4. In a small bowl combine 1 tbsp of the alcohol/apple juice from the fruit mix with the milk, the oil, the sugar and mixed spice.
  5. Stir in the flour, baking powder and salt.
  6. Stir in the drained dried fruit
  7. Pour into the mini cake tin or ramekin and bake for 18-25 minutes (I’ve found using a ramekin takes a little longer) until the cake is risen, golden and cooked through
  8. Unmould (if using a tin) and leave to cool
  9. Dust with icing sugar or perhaps top with a thick water icing
  10. (if you make this ahead you can feed it with alcohol/juice but don’t do that if you’re eating it straight away as that is all you will taste!
