Single serve double chocolate cookie

dairy-free, egg-free, nut-free, soya-free, sesame-free, vegetarian and vegan Makes 1 generous cookie

Ingredients
  

  • 15 g dairy-free margarine
  • 20 g soft brown sugar
  • Pinch of salt
  • 20 g plain flour
  • 1 tsp cocoa powder
  • Pinch of bicarbonate of soda
  • 20 g choc chip/chopped chocolate

Equipment

  • 1 bowl and 1 baking sheet and a piece of baking paper

Method
 

  1. Cream together the margarine and sugar
  2. Stir in the salt, flour, cocoa and bicarb.
  3. Then mix in the chopped chocolate
  4. Form into a ball and place onto a lined baking sheet, press down so you have a thick disc
  5. If possible place in the fridge for at least an hour
  6. Preheat the oven to 170 degrees Centigrade
  7. Bake the cookie for 11-12 minutes.
  8. Leave to cool before eating
