I guarantee this is one of the best chocolate cookies you’ll have ever tasted, that just happens to be dairy-free, egg-free, nut-free and vegan. Save this recipe because you never know when you’ll need a cookie for one.

Sometimes you just need a cookie and the more chocolatey the better – in which case, this is the recipe for you. This single serve cookie is so deeply chocolatey and delicious you may wish you’d made more than one! But keep this recipe in mind when you’re craving a cookie, have a guest who needs a fantastic egg-free, dairy-free and nut-free cookie, or perhaps you know it’ll be hard to stop at just one, in which case you’ll be able to avoid the additional temptation!

The beauty of this recipe is that the ingredients are store cupboard staples, plus a bif of chocolate and it can be whipped up in minutes. If you can let it chill in the fridge for an hour before baking then all the better, but you’ll still have a delicious cookie if you can’t spare the time.


Single serve double chocolate cookie
Ingredients
Method
- Cream together the margarine and sugar
- Stir in the salt, flour, cocoa and bicarb.
- Then mix in the chopped chocolate
- Form into a ball and place onto a lined baking sheet, press down so you have a thick disc
- If possible place in the fridge for at least an hour
- Preheat the oven to 170 degrees Centigrade
- Bake the cookie for 11-12 minutes.
- Leave to cool before eating
