Vegan Chocolate S'mores Salami

dairy-free, egg-free, nut-free, sesame-free, vegetarian and vegan

Ingredients
  

  • 100 g dairy-free chocolate
  • 30 g dairy-free butter
  • 1 tbsp syrup golden or maple
  • 1 tsp alcohol or dairy-free milk
  • 2 tbsp cocoa powder
  • 1/2 tsp vanilla extract optional
  • 50 g mini marshamallows vegetarian if needed
  • 30 g biscuits roughly broken
  • 2 tbsp icing sugar

Method
 

  1. Melt together the the chocolate, butter, syrup and alcohol/milk. Stir until smooth and luscious.
  2. Stir in the cocoa powder and vanilla (if using)
  3. add the marshmallows and biscuit pieces and stir so everything is well coated
  4. stretch out a piece of baking paper or cling film and place the tiffin mix into a log shape. Roll up , twist the ends and roll to form a smooth cylinder
  5. place in the fridge for at least an hour to firm up
  6. unroll the wrapper, dust the surface of the tiffin cylinder with icing sugar, so it's completely covered.
  7. Cut into thick slices and enjoy

Notes

This chocolate salami keeps well for 3 or 4 days if kept in a sealed container
