Vegan Chocolate S’mores Salami

Chocolate salami, sounds odd, right? Well actually it’s a genius concoction of fudgy chocolate encasing whatever you like, such as biscuits, nuts and dried fruit, and then rolled into a salami shape. The theme is further emphasised by a generous coating of icing sugar, and i have even seen people tie up the chocolate log with string to give an even more authentic appearance!

Not only does chocolate salami taste great, but it’s a lovely addition to a sweet ‘charcuterie board’ or a homemade chocolate box. Since i don’t use nuts in my recipes i’ve opted for a s’mores version, using biscuits for crunch and vegan mallows for sweetness, colour and bouncy texture. It’s a very delicious combination and would be an extremely decadent side to a mug of hot chocolate!

Is Christmas even Christmas without chocolate treats to enjoy? Since the variety of safe chocolates available is better than it was, it still isn’t where we’d like for a joyous chocolatey Christmas. This chocolate salami is not only very quick and easy to make, but it certainly adds some extra joy to your Christmas treats.

Vegan Chocolate S’mores Salami

dairy-free, egg-free, nut-free, sesame-free, vegetarian and vegan
Prep Time 10 minutes
chilling time 1 hour

Ingredients
  

  • 100 g dairy-free chocolate
  • 30 g dairy-free butter
  • 1 tbsp syrup golden or maple
  • 1 tsp alcohol or dairy-free milk
  • 2 tbsp cocoa powder
  • 1/2 tsp vanilla extract optional
  • 50 g mini marshamallows vegetarian if needed
  • 30 g biscuits roughly broken
  • 2 tbsp icing sugar

Method
 

  1. Melt together the the chocolate, butter, syrup and alcohol/milk. Stir until smooth and luscious.
  2. Stir in the cocoa powder and vanilla (if using)
  3. add the marshmallows and biscuit pieces and stir so everything is well coated
  4. stretch out a piece of baking paper or cling film and place the tiffin mix into a log shape. Roll up , twist the ends and roll to form a smooth cylinder
  5. place in the fridge for at least an hour to firm up
  6. unroll the wrapper, dust the surface of the tiffin cylinder with icing sugar, so it's completely covered.
  7. Cut into thick slices and enjoy

Notes

This chocolate salami keeps well for 3 or 4 days if kept in a sealed container
