Is there anything more nostalgic than a rice crispy treat? Super easy, no bake, family friendly treats that transport you straight back to childhood. In fact it was those Rice Krispie Squares that were always the treat given on school trips to the girls’ classmates, but they always had to miss out as they always contained milk. It was always such a disappointment to not be able to enjoy a tempting looking treat.

I’ve avoided recreating Rice Krispie Treats as it would be easiest to use conventional marshmallows that contain gelatine and as I’m vegetarian I wouldn’t be able to taste test. However I recently bought a bag of Dandies vegetarian marshmallows and Rice Krispie treats seemed to be the perfect way to use them up.

Uniquely chewy, crispy and marshmallowy, these vegetarian rice crispy treats are difficult to resist. I’ve used a good dose of vanilla to ramp up the homely comforting flavour. There really isn’t much to not like about these very moreish treats. If you are happy to eat gelatine then simply sub usual marshmallows, in the same quantities.

There’s nothing like a no bake, simple, recipe for making everything a bit easier. take 10 minutes to make these and you have the perfect addition to lunchboxes or as an afterschool snack. Plus it’s a fun recipe to make with the kids too.
