
Crunchy nut cornflakes are a breakfast staple but if you can’t have nuts, you won’t ever have experienced the delight of slightly sweet, caramel toned cornflakes with salty and crunchy nut pieces. Until now that is! Here we have a wonderfully easy recipe to turn your basic cornflakes into a crunchy nut-alike, with not a nut in sight!

So how do I get the nut-effect without nuts? Well you could use Wow butter or a crunchy seed spread but I’ve chosen to use crushed up pretzels. I wanted to replicate a real crunchy nut cornflake that has a slightly sweet crunchy cornflake with bits of nuts. The pretzels replicate the extra crunchy, slightly salty effect you’d get from the nuts and I think it gives a perfect nut-free finish.

This recipe nut-free but it’s also dairy-free and can easily be made gluten-free if you use suitable cornflakes and pretzels.
Not only is this a perfect breakfast cereal, but it makes a great snack (I’m currently munching on these incredibly moreish flakes as I’m writing this!). Also, they keep well for a week or so as log as your store in an airtight container like a clean jam jar.

Nut-free crunchy nut cornflakes
Method
- Preheat the oven to 200 degrees Centigrade. Line a baking sheet with baking paper
- Melt together the sugar, margarine, and syrup. Add the salt.
- Stir in the cornflakes and half the pretzels, mix until nicely coated
- Pour onto the lined baking sheet and sprinkle over the rest of the pretzels
- Bake for 5 minutes until golden. Leave to cool (they will get crispier as they cool)
- Store in an airtight container
