Copycat Pret Popcorn Bars Recipe (dairy-free)

Three bars made with puffed rice, drizzled with chocolate and caramel, resting on brown parchment paper.

Love Pret’s popcorn bars? These homemade copycat Pret popcorn bars are a delicious way to recreate that sweet, crunchy snack at home. With a satisfying mix of textures and a sweet-and-salty flavour, this easy recipe is completely vegan and dairy-free, making it perfect for more people to enjoy. (As always my recipes are adaptable and can be easily tweaked to your own requirements 🙂 )

Have you ever had a Pret popcorn bar? They’re super sweet but light as a feather and a rather enjoyable little snack. The popcorn is enrobed in white chocolate and then drizzled with caramel and chocolate. And as usual, with anything I come across, I always want to make a friendly version.

This recipe, whilst being super simple, has taken a fair few incarnations to get the perfect formula. If you search up Pret popcorn bar recipe on google you’ll mainly come up with one of my previous recipes which is mightily tasty but not authentic as it doesn’t use white chocolate. These instead are the absolute bees knees and almost identical the originals, just without the dairy content.

My first attempts were a bit too much like rice crispy bars, where they have a chewy, marshmallow texture, but that wasn’t what I was after. The Pret popcorn bars are more firm, crisp, and dry, and that was what I wanted to recreate. In my opinion, this recipe gives the exact texture I was looking for, and the white chocolate coats the popcorn and rice crispies, to make sure they not only taste crisp and moreish, but also that they stay fresher for longer. In my experience marshmallow rice Krispie bars always go stale extremely quicky, and who wants that!

I’ve used a combination of rice Krispies and popcorn which gives a nice bar texture and also added some mini vegan mallows – totally optional but they’re quite a nice addition.

I’ve done my best to faithfully recreate the Pret originals and have drizzled them with my caramel sauce and chocolate. Making the caramel sauce does add another stage and can easily be left out, but as my caramel sauce has a slight bitter edge it contrasts extremely nicely with the sweet white chocolate.

Dairy-free/free-from white chocolate can be difficult to find and sometimes tastes a bit too like sweetened cocoa butter for my liking, so you may need to look around for the one that appeals to your taste buds. I personally have never found better than the white chocolate sold by Fetcha and would really recommend ordering in a few bags!
