I’ve used this delicious sauce in a myriad of ways this week…. On it’s own, on ice cream, in my fromage frais recipe and in a fruit fool. Use any berry you like (I used strawberries as it’s the start of the British strawberry season) to make a sweet, sticky and vibrant sauce… I’m also thinking it would go really well with my scrummy shortbread to dip.
Berry Coulis (dairy-free, egg-free, nut-free, sesame-free, soya-free, gluten-free, vegetarian and vegan)
250g strawberries, hulled
40g caster sugar
1tbsp lemon juice
– wash the berries and place in a saucepan. Add the other ingredients and stir.
– Over a low heat melt the sugar.
– pour into a food processor and blend until smooth
– pass through a sieve and keep in the fridge until required.
