
Cinnamon Swirl Pancakes, what a fantastic idea! Little S saw this on TikTok and I had to make my own version – you may think it’s a bit of a gimmick but the cinnamon flavour really comes through and they really do taste just like a cinnamon bun, in pancake form!

I’ve made the batter especially thick so get get a lovely fluffy pancake that holds the swirl – you want to have the look of a cinnamon bun after all. Plus the light fluffy texture really adds to the fun nature of these pancakes.

In this recipe i’ve used some of the amazing Organic Ceylon Cinnamon Powder which gives an incredible warm spicy flavour.

Cinnamon Swirl Egg-free Pancakes
Method
- Sift the flour and mix in the other dry ingredients
- Add oil and dairy-free milk and whisk until smooth
- Remove 2 tbsp of the batter and place into a small bowl, mix in the brown sugar and cinnamon. If possible place this in a piping bag.
- In a hot pan, wiped with oil, fry ladlefuls of the batter, adding a swirl of the cinnamon batter to the uncooked side whilst the first side is cooking. This is easiest with a piping bag or you could use a spoon to drizzle it on.
- Fry on both sides in a hot pan wiped with a smear of sunflower oil
- Eat hot topped with honey, maple syrup or perhaps a water icing.
